EXTRA BRUT

This wine reveals a slightly pink hue, reminiscent of "œil de perdrix" (partridge eye), resulting from the full ripeness of the Pinot Noir at harvest (11°).
Its aroma delivers red fruit notes such as raspberry and red cherry, complemented by black fruit nuances like blackberry and blueberry. A touch of freshness comes from hints of apple and green apple.

Our Craftsmanship
All our grapes are delicately pressed in our traditional Coquard press. To preserve the identity and character naturally present in our wines:
• We perform no filtration or fining.
• To maintain the freshness of our Pinot Noir, we avoid malolactic fermentation.
• Cold stabilization occurs naturally, as temperatures drop in the cellar during winter.
• Riddling is done manually on traditional wooden racks.
• To ensure full control over our wines, we craft our own liqueur.
